Hitting F3 should bring up the controls for the vehicle you are riding. I got on the ATV and hit F3 to see the controls for the vehicle but the HUD just displayed the controls for when you are walking not on a vehicle. Makes no sense in having F3 option constantly in the upper left hand corner of the screen if it will not display the controls for what you are using in game.
