When seeds are in the inventory, stacked or otherwise, you can't see how many seeds are in each canister or stack of them. You have to use the seeder to check these numbers. The bar indicator below the icon gives us an approximation but not an exact count. I think the full seed count of a stack should be included with the hover mouse information.
